    FINE FLAVOR COCOA

    Fine flavor cococa comes from criollo and trinitarian varieties, which are different, in aroma and flavour from common cocoas which derive from forastero varieties. Trinitarian cocoas -highly sought after around the world, aromatic and mild in flavour. The trinitario variety is the result of cross between the criollo and forastero varieties and is produced mainly in Colombia, Peru and Venezuela. Forastero cocoa is the most common in the world. It is climate resistant and has an acidic astringent flavour. It is the main variety grown in Africa.

    Fine flavors include fruit (Fresh and Ripe), floral, herbal and wood notes, nut and carmelic notes. The fine flavor designations is an ICCO (International Cocoa Organization) classification which describes an exquisite aroma and flavor. Only 5% of the global cocoa production is classified as fine flavor cocoa. 76% of the worlds fine flavor cocoa comes from Colombia, Venezuela, Ecuador and Peru. The Fine Flavor Designation is an International Cocoa Organization (ICCO)* classification, which describes an exquisite aroma and flavour. Between 5% of the cocoa produced in the world is Fine Flavor Designation. 76% which is grown in Colombia, Ecuador, Venezuela and Peru.
